How to make Lontong Lodeh

Hey guys, here at KenduriTV there are no specific measurement to all our recipes. You kind of have to wing it and always taste as you go! That makes cooking much more fun & exciting!

Here are the ingredients:

3 Shallot – tbspn of blended shallots
2 Garlic – tspn of blended garlic
2 Ginger – tspn of blended ginger
1 Lemongrass – bruise the ends
1 Dried chilli paste – tbspn
1 Dried shrimp – tbspon of blended dried shrimp
1 Tumeric – tbspn or you could use fresh tumeric about 1inch
8g Belachan – toasted

1/2 Eggplant – cut into cubes
1/2 Sweet potato – cut into cubes
1 Vermicelli – handful
1 Dried beancurd – handful
1 French beans – handful
5 Tofu – cut into pieces
1/2 Tempeh – cut into cubes
500ml Coconut cream
500ml Water – or more, according to desired consistency.

Season to taste with Salt, sugar and pepper.

Best served with Lontong rice cakes, peanut sauce and boiled eggs. You could even dress it with some sambal for a little kick!
